Self taught with books in the late 1960's, Penelope Zeller collected and worked with known food mushrooms of Colorado. Wanting to expand her food sources and not risk poisoning, she began her formal exposure to mushrooms when she became a member of the Colorado Mycological Society in the late 1970’s. Penelope has volunteered for past CMS Mushroom Fairs and several North American Conferences. She enjoys creating new methods of using unusual food ingredients, and developing recipes. A Project Manager for The Business Ranch, Penelope has lent her consulting and business talent to restaurants and event groups focused on food use and gardening with fungus.
